Preheat the oven to 400 Degrees or put it on the grill for about 40 minutes.
Stir after about 10 minutes to make sure the potatoes brown evenly.
If you want to add diced bell peppers, mushrooms, carrots, and onions add the veggies diced or sliced during the last 10 minutes of cooking.
After the potatoes are done, sprinkle shredded cheese over the potatoes and sausage and let it cool off a little bit.
Serve warm. Add some parsley if desired.

8. Haloumi Pita (vegetarian)
Ingredients:
- Haloumi Cheese (found in Trader Joe’s)
- Tomatoes
- Rucola
- Peppers, Mushrooms, Zucchini
- Olive Oil
- Pita Bread
If you don’t know what Haloumi cheese is, you have to try it. Haloumi is originally from Cyprus and is so delicious. It is stored in salt brine and therefore won’t get bad. The consistency is a little harder than Mozzarella and perfect for grilling. It is used in Europe mainly as grilled cheese with grilled vegetables. It tastes a little salty but doesn’t have a strong cheese taste.

How to make it:
You can make different kinds of Pita Sandwiches, we like tomatoes and rucola or grilled vegetables:
Cut the Haloumi Cheese into about 1/4″ slices.

Add a splash of olive oil in a pan and add the cheese slices carefully (it might splash because the Haloumi comes out from a watery salt brine).
Brown the cheese slices on each side on medium heat for about 5 minutes.

Warm up the Pita bread on the campfire and add 3 slices of Haloumi cheese, 3 tomato slices, and a little rucola on top, and done.

or
Haloumi with vegetables
Dice the vegetables, add salt, pepper and basil or a little oregano and fry it in a pan with olive oil until brown.
Warm up the Pita bread, add 3 slices of Haloumi and 2 spoons of vegetables to the Pita and done.

Tastes absolutely delicious and is done in 10-15 minutes.
