8. Haloumi Pita (vegetarian)
- Haloumi Cheese (found in Trader Joe’s)
- Peppers, Mushrooms, Zucchini
- Olive Oil
- Pita Bread
If you don’t know what Haloumi cheese is, you have to try it. Haloumi is orignally from Cyprus and so delicious. It is stored in a salt brine and therefore won’t get bad. The consistence is a little harder than Mozzarella and perfect for grilling. It is used in Europe mainly as a grilled cheese with grilled vegetables. It tastes a little salty but doesn’t have a strong cheese taste.
How to make it:
You can make different kinds of Pita Sandwiches, we like tomatoes and rucola or grilled vegetables:
Cut the Haloumi Cheese in about 1/4″ slices.
Add a splash of olive oil in a pan and add the cheese slices carefully (it might splash because the Haloumi comes out from a watery salt brine).
Brown the cheese slices on each side on medium heat for about 5 minutes.
Warm up the Pita bread on the campfire and add 3 slices of Haloumi cheese, 3 tomato slices and a little rucola on top and done.
Haloumi with vegetables
Dice the vegetables, add salt, pepper and basil or a little oregano and fry it in a pan with olive oil until brown.
Warm up the Pita bread, add 3 slices of Haloumi and 2 spoons of vegetables on the Pita and done.
Tastes absolutely delicious and is done in 10-15 minutes.
